Cookie caramel cups…

Hi guys… I don’t know about you, but I love chocolate and when I saw these on Pinterest I knew I just had to make them!

Since I’ve been in America I’ve had to get used to the fact that here they don’t have biscuits like I’m used to in England (eg. digestive’s, jammy dodgers, party rings, Bourbons to name just a few I could go on for hours!) The closest thing that I can get to a biscuit here is Kit Kat’s and Twix’s, and this recipe reminded me of Twix’s but with a little twist.DSCN3395

Here is what you will need:

  • Ready-made cookie dough
  • 2 cups of caramel’s
  • 2 cups of chocolate chips
  • 1-2 table spoons of water

For this recipe I used ready-made cookie dough which is so much easier than making it from scratch but it’s probably nicer making your own, that way you can use your favorite recipe and make them just how you like them but I didn’t really have time to make the cookie part from scratch so this was my next option. I was going to use sugar cookie dough but the grocery store didn’t have that so I got what they had which was chocolate chip. (Which makes then even more chocolatey!)DSCN3399

I put the cookie dough into a greased muffin tin (make sure its greased enough otherwise the cups will break when you try to take them out of the tin) and I pushed the cookie dough up around the edges to make into a cup, then put them in the oven for the length of time it said on the packet or whatever your recipe says. Keep a close eye on them so they don’t burn. When they are done use a shot glass or something round that will fit in the tin to push down the dough that has risen to make it back into a cup. Let them cool in the tin, then use a regular knife to carefully remove the cups from the tin.DSCN3394

I put the caramel’s and water in a bowl, then put that in the microwave for 15/20 seconds, stirred then put it in again for the same amount of time. I then carefully spooned some caramel in each of the cookie cups and put them in the fridge to set for around 20/30 minutes. When the caramel set I melted the chocolate chips in the microwave also then spooned that chocolate on each cup and put that back into the fridge to set, and that’s them done, super easy!

These where really delicious, they go great with a scoop of your favorite ice cream or to eat as a nice little snack with a hot chocolate.
